Ingredients:
- 8 Eggs
- 10 oz. Frozen Chopped Broccoli
- 1 Carrot diced
- 3/4 Cup Cheddar Cheese
- 1 Table Spoon Chopped Green Onion
- 2 Tea Spoons prepared Mustard
- 1 Tea Spoon Salt
- 1/4 Cup Milk
- 1/4 Cup Water
- 1/8 Tea Spoon Pepper
- 2 Tea Spoons Olive Oil
Directions:
- Add broccoli, carrot and water into a nonstick skillet and cook over medium heat for 10 minutes or until tender.
- In a large bowl add 8 eggs and beat well with beater.
- Add milk, mustard, salt and pepper in eggs and mix well.
- Add broccoli mixture, cheddar cheese and onion and mix all ingredients well.
- Add olive oil in a nonstick skillet and heat it over medium heat.
- Pour the mixture of eggs and cook for 8 to 10 minutes until eggs are almost set around the edges but is somewhat liquid in the middle.
- Now transfer the skillet to oven and bake the frittata for 1 to 2 minutes until the surface is set and golden brown.
- Cut the frittata into 8 pieces and serve.
